This was delicious. I took it easy on the red pepper flakes so that my kids would eat it.
My pork was 2.5 lbs & came out at an internal temp of 200'F, but was still tender and not terribly dry. However, at this weight definitely cut your cooking time down.
I added umami seasoning to the salt
and pepper rub in the first step prior to searing. So savory🤤 Great recipe. Will make again!
