This recipe is easy and makes gorgeous thick pancakes. Don't skip sifting the flour! I added frozen berries, gently pressing them into the uncooked side of the pancakes right after pouring the batter into the hot pan. The pan didn't need any oil, just a low-medium heat. I made a full recipe, which generously fed me and my partner (a big eater) with plenty of leftovers to snack on. For smaller appetites, a half batch would have been fine.
