I don't know why the author says the rice is the star. I thought the chicken was the best. I grew up watching my mother make Oroz con Pollo and have made it myself many times. This is a new variation I will add to my repertoire.
I did use the techniques I learned from my mother in making a chicken and rice dish. After I sweated the onions, I put in the leftover marinade sautéed a bit until aromatic. Then, I put rice in and toasted it a little in the oil, garlic, and onions before I added the broth. It's just how I was taught to make a chicken and rice dish like this.
