This is it!! THE fluffy pancake recipe. I'm done searching. A third of the recipe as written feeds two of us (hungry adults) as long as there are wee extra toppings to go with it. Keep the pancakes fairly small for easier flipping, I used the smallest hob ring on the lowest possible heat to ensure they cooked through. The pan doesn't really need any oil on it.
