I understand... Nowadays, I simply start by sauteing mirepoix (celery, carrots and onions) in a bit of sesame oil. Then I move the veggies off to the side of the pan in preparation for the next step.
Next, I add an egg, or several, depending on the size of the meal I'm making, one egg per person. I scramble the eggs in the pan, without worrying about how scrambled they actually get, and add a little bit of black pepper, but no salt.
Next step, once the eggs are done, I mix the eggs and veggies, then add the rice and mix it in as well.
Finally, I pour in more sesame oil to let the rice cook up, and add soy sauce to taste.
I can't have Sriracha because of a preservative, so I leave that to personal taste.
