This is a really good dish! You notice there aren’t a lot of grill marks, even though I used a stove top grill for this recipe. Even after letting the chicken sit out in paper towels, so it would dry out, I noticed water in the grill while grilling, which is why I didn’t get as many of the grill marks as I wanted. Nonetheless, it was super tasty and the pickling was noticeable so it tasted fabulous.
I have always found that leaving chicken out in the refrigerator to dry for a full day works best. I did not have time to do that in this case.
I served it with a side of Mexican Elote corn on the cob and a power coleslaw. I recommend this one for a quickie weeknight dinner; it satisfies and has a punch of flavor!
