This is a really nice bread! Moist, cinnamony, pleasant flavor. It’s a bit dense, but I don’t mind. I forgot one of the ingredients was mashed sweet potatoe, so I had to make that before I could get, which made it take longer. I peeled and boiled sweet potatoes in salted water for about 20 minutes, then mashed it with some butter and salt. I forgot to add milk, but I just added milk at the end to thin out the batter consistency. I also swapped out the kefir for Greek yogurt since that’s what I had in my fridge. It seemed to work just fine! Though perhaps that made it denser, or is why I needed to add more milk at the end to thin it out.
