What exactly did you do? My husband and I have made these 3 or 4 times and they came out perfectly each time.

We followed the recipe video, with the ingredient amounts listed. I have no clue what went wrong. It looked perfect up to the point in the video where he cuts from folding it to it being a perfect dough. Ours never reached the dough and was just crumbly balls

Hmm, we mixed the egg whites in a stand mixer and then slowly incorporated the dry ingredients. Ours has come out and perfect squishy balls each time. Smooth all around. You do have to roll the balls in your hand a bit to get them smooth, though.
