I used mushroom seasoning instead of salt, in the same quantity, and left out the parsley and sugar, and skipped the glaze entirely. My partner and I were both pleased with the results. The mushroom seasoning probably has MSG in it, but my, how it enhanced the flavor without making it taste salty! Oh, and I sauteed the onion in avocado oil and added the oil with the cooled onion. It still tasted pretty sweet, so maybe next time, I omit the ketchup. I know it sounds like I pretty much skipped the recipe, but I believe the spirit of it was there, if not every particular detail. Like with meatballs, the panade from the milk, egg, and bread crumbs keeps the meat moist at any serving temperature. There are just two of us, so meatloaf sandwiches for lunch today. They were phenomenal. I had mine with dill pickles, sliced tomatoes, mustard, and mayo on whole wheat bread. I might make it just for the sandwiches the next day, they were that good.
