It was mostly easy. The hardest part was folding the dough around all the veggies. I think all the veggies need to be cooked down more (including the spinach) before putting on the dough to reduce the size of them so they fit better. Other options would be to have more dough or maybe cook less veggies. I used a full two cups of Monterey Jack. That seemed fine. Next time, I would probably add some salt and pepper while cooking the veggies. My son wants pepperoni in it, so maybe I could do half of it with pepperoni and half without.
