These are shockingly good for how easy they are. I used bacon bits instead of frying up some bacon, so it came together with minimal mess in less than 5 minutes.
I cooked for 25 minutes, per the instructions. Most of mine turned out exactly as pictured, but a few of them were not fully cooked through. In the future, I'll experiment with a slightly higher temp or slightly longer cook time.
This recipe does a great job of copying the sous vide effect. The egg bites are moist and custardy with mostly uniform texture, unlike a lot of egg muffins which have a more noticeable egg taste, are fluffier, and have a stronger cooked outside.
I was worried the hot sauce taste would get completely lost, but I was able to taste a slight hint of mine, so I recommend playing with what kind of hot sauce you put in, and how much! I used a Carolina reaper sauce and it complemented the gruyere super well, so don't skip it unless you really dislike hot sauce!
It's just a really well done recipe, and you can play a lot with the final result. I imagine I'll be making these a lot!
