Let's be honest. This is cake. That said, it's delicious, and no more effort than making it from a box, with ingredients you probably already have. You can reduce the sugar without reducing the rise, but it will affect the texture and browning. Sugar adds moisture, so it will be drier if you reduce. I used a half cup of sugar and brushed the top with a little melted butter for the last 5 minutes in the oven and i was pleased with the result. I like medium grind yellow cornmeal in this because I like a little color and texture in my cornbread, but you can use white or fine cornmeal to suit your preferences and it will still work. Just be aware that the finer the grind, the denser the cornbread. This with strawberries and whipped cream makes a perfect brunch dessert.
