Made twice and counting..
I would add more spinach and feta and a little less squash - made it with butternut squash and will make it again.
Can add red onion
Half of dressing needed.
Btw if you're stuck without an oven like I was the second time you can totally microwave the pumpkin or butternut squash pieces for about 8 minutes until they are soft and then sear them in a pan to get the roasted feel (maillard reaction)
