Lovely recipe! Really close to the taste of a shop bought digestive, and all the better for being homemade. I bought medium oatmeal (not the usual flattened porridge oats) for this recipe, which I think was pretty important to the texture. I dipped half of them in white chocolate and half in dark chocolate. 15 minutes at 180c was perfect.
Be sure to roll the out nice and thin as some of mine came out a bit chunky 😅
