This was a good dish and pretty easy to make. I used boneless, skinless chicken thighs, rainbow mini potatoes, and rainbow baby carrots. I also used a red onion (as requested in the recipe) and I threw in a few leftover diced radishes I had in the fridge. I used dried oregano and dried thyme (used teaspoons of it instead of tablespoons of fresh herbs). I also used lemon juice instead of an actual lemon. I used a tablespoon of lemon juice spread.over all the chicken pieces. I put this on before baking. Came out really good. I just added some more salt to my veggies when it was done.
