These came out really great! I used a bag of pre-peeled frozen apples and the texture was still excellent! I was worried it might turn the cookies to mush or something but they were nice and cakey as advertised :) I also tried making it twice with a different type of oat each time and the quick oats actually came out great even though the recipe said to use rolled oats. Both were delicious, just slightly different textures. *Definitely* flatten the dough balls a little more than "slightly" because they don't really sprawl out like a sugar cookie would. My first batch was very, very tall 😅 All in all, this recipe is super forgiving, so modify all you want, but it's spectacular as is :)
