I make this for my toddler all the time and he loves it. So do I to be honest, it’s like lovely healthier comfort food. The first time i made the recipe I used a full tub of cream cheese by accident
and it was lovely so now I always do that. I also use whatever grated cheese I have on hand. Whatever vegetables are left in the fridge can be used, I’ve done mushroom, broccoli, carrots, cauliflower. Freezes well too and easy to defrost for a quick lunch.
