I would do half an onion.
I also did less mayonnaise with the remoulade, which just meant it's more concentrated. Really inspired sauce. So good!
With the croquettes, I balled up 4 or 5 at a time and added to a hot Teflon pan with little to no oil. Smashed them down with a spatula. If they stuck, I dipped the spatula in a bowl of water. Flipped when brown. I think very little oil was needed to cook them and they were fantastic!
