This would have been good without the walnut (which was confusing) or the eggplant (though to be fair, our eggplant wasn’t very good). I could do this again without those two, maybe add some bell pepper instead. But I probably won’t. Couldn’t find red rice so went with orzo per someone else’s comment. Also roasted the walnuts (added them to the veggies 10 minutes in). Took 30 minutes for the vegetables to roast.

you basically changed the whole dish, why did you even put a rating on mine, your meal is different from the one you are rating. I would never make this with orzo and say this is good ... the recipe says use red rice ...

Well, I couldn’t find red rice, and a previous comment said they used orzo and liked it. Where do you get red rice?

At the local Italian Store, or at the supermarket. Depending on where you live, you may order it online - I'm sure places like Amazon have it.
