I enjoyed trying this recipe for the first time, and by following the ingredient amounts for 3 servings I found this made 4 in total (so my partner and I had leftovers for the next day).
I'm not normally a fan of courgette or eggplant, however this dish converted me on courgette! Sadly I couldn't enjoy the odd texture of the eggplant, but the tasty sauce made it palatable ๐
This is a nice twist on a classic vegetable stew - by cutting the vegetables into discs, you get a different experience than just eating chunks of vegetables. It adds a bit more excitement and flair to an otherwise 'boring' dish!
I probably won't be making this again, as the dish was a little 'flat' in my opinion, but it was tasty nonetheless ๐
Leftovers update:
This doesn't taste that nice the day after, or when reheated. Therefore I'd recommended this make for special occasions only.
