This was fantastic and a big hit with the whole family! I would suggest getting the yellow cake baking as the first step and then toasting the coconut as that can take a bit of time to watch, stir, and not burn! I excluded maraschino cherries as my husband and I are not fans. Could try really squeezing the juice from the crushed pinapple, but I'm not sure it's necessary. I simply drained it like the recipe directed. I also added coconut extract to the coconut cream & sweetened condensed milk mixture, and also some coconut extract was folded into the cool whip. Very nice touch that added a bit more coconut flavor to the whole thing.
