Couldn't get the chewy cookie texture, just cakey. Still good flavour, and I didn't mind the cake-iness - it just wasn't what I was going for. Drying the pumpkin was a pain, though. Used maybe 8-10 sheets of paper towel to get it mostly dry. I was disheartened by the waste, but someone in the website comments said to try freezing or microwaving in spurts to draw out the moisture.
