The recipe is for three people but as it was only for me and my hubby I used 150g of pasta but kept all other measurements the same.
I added the spinach to the creamy chicken mix without having added it to the pasta water first (can't see the point of that!). I used 4 tablespoons of fresh tarragon which really gave it a fabulous flavour.
I'd read that a few others thought it was bland so had added plenty of seasoning, a little Dijon and a splash of white wine. I did all of that but still found it needed slightly more seasoning at the table.
I served it with a salad of chard leaves, little Gem lettuce, tomatoes, cucumber and a french dressing. And a chilled bottle of wine. Not bad for a Tuesday evening! Delicious!
