Absolutely delicious! Now I asked Siri about other vegetables are usually found in Pasta Primavera (there are a good bit to choose from too); to which, the ones I added in addition to what was listed for this recipe really beefed up the overall flavor of the dish. I did:
Handful and a half of asparagus
4 carrots (long ones not baby carrots)
2 tomatoes off the vine
Frozen bag of peas (small)
3 Zucchinis
1 lb White button mushrooms
And 1 Red Onion
Served on Bowtie Pasta
I am working on becoming Orthodox Christian and for our fasts I was looking for something that would fit in to our diet- all I omitted was the oil and began cooking everything with a little bit of water and worked from what was longer/harder cooking to shorter/softer. Siri included that all you do to season Pasta Primavera is Salt and Pepper. The juices of the vegetables will season the dish- which it was so tasty. I did add my mushrooms last to allow maximum flavor to be absorbed by the little sponges. I also added the frozen bag of peas in the middle of cooking to allow for it all to “steam”/defrost by the time I finished. Too, I didn’t see any instructions for this so a thing to keep in mind, the more uniform/thinly cut your vegetables are- the more timely everything will cook together.
