's easier if you roll it out on parchment and use a small biscuit/cookie cutter to perforate, but don't try to separate them until fully baked. it's easy to blow through a batch of this size very quickly, so if you have the oven space, i suggest doubling or tripling the batch, because of how much effort goes into them for them to be gone so quickly. honestly, i haven't made them in months because i'll just eat them all and knock myself out of ketosis, again LOL
