Good-tasting keto substitute for traditional potato soup or brocolli cheese soup. i didn't like the carb load, so i replaced the 1/2 yellow onion with 1/2 cup chopped spring onions, halved the amount of broccoli, and reduced the cheddar cheese to 1 cup. To make it thicker, i reduced the heavy cream to 1 cup, increased the cream cheese to 2 Tbsp/1oz/28g (I only use philly or something organic- be careful of Kirkland, Member's Mark, Sam's Choice, Kroger, WinCo brands, etc. because they contain additional fillers to serve as emulsifiers and thickening agents to produce it more cheaply, such as guar gum, gum arabic, carob bean, and xanthan gum which makes the product double the carbs of Philly brand. Also... kirkland's does not even taste like cream cheese) and added 1/2 cup of cauliflower (which i then pureed). It's great to make a big batch of this soup and store in jars in the fridge for quick lunches or in the freezer for a busy dinner night.
