My whole family really enjoyed this! I did use the suggestions that other people gave to use broth instead of water to cook the quinoa. I also made the avocado dressing to top it off with which was delicious! I marinated my onions in lime juice and apple cider vinegar. I'm not sure if that changed anything or not. I also added fresh cucumbers just because I love cucumbers and needed to use them. I wasn't sure how we were going to like this with the mixture of the warm quinoa and shrimp with the cold veggies but my entire family loved it! We will definitely be making this one again!
