This was AMAZING! I used Biscoff cookies for the crust (just cookies and butter - no sugar necessary) and took it into work. Everyone raved about it! It does need to set after taking it out of the Instant Pot. Usually overnight in the fridge is perfect. I've made this several times and it always comes out great!
