This is a relatively simple thing to make but is definitely worth it in my opinion I made the recipe for two people properly oiling and seasoning the pork fillet with salt and pepper. I used a cast iron skillet to sear the fillet well on four sides before putting the pan in the preheated oven and used a thermometer to make sure that I didn’t overcook the pork. I let the pork rest well on a board before slicing it and serving it alongside mashed potatoes and broad beans. Whilst I’m sure that fresh tarragon would probably have been slightly more flavoursome I put all the sauce ingredient into a pan including dried tarragon and heated everything together. Add water to thin the sauce if needed but don’t assume that it will be. I’ll definitely be making this dish again
