This recipe hits the notes of comforting, earthy, and delicate, while still having a bit of richness to the sauce. That sounds a bit pretentious, but I personally like to know what kind of recipe I'm getting myself into!
I was gifted a lot of fresh shiitake and oyster mushrooms, so I wanted a recipe that would let them shine. This was great for that, and I recommend using this if you've got some fancier mushrooms on hand. I probably would not go out of my way to make this with basic white mushrooms. It would still be good, but this dish is pretty simple, and I think it might get out of the range of "nuanced" and into "bland". That said, if you really enjoy mushrooms and want something simple and comforting, you'd probably still like this!
I probably let my sauce evaporate a bit too much, I'd recommend watching that section carefully!
