It really helps to marinate overnight because the chicken will have more flavor, and you will have less to do the next night. I added 1 teaspoon of cornstarch to the first marinade to velvet the chicken. The result was very tender chicken. I used passata so I wouldn't need to puree the tomatoes. Definitely include the onions to mellow the acidity of the tomato. I used 3/4 cup of Easy Onion instead of slicing and sauteeing 1 1/2 cups of onion. Very delicious, but definitely not great for a weeknight dinner. I served it with tumeric rice.
