I took about 3 cups of baby spinach I needed to use up, and dumped it in when I was frying the onions with garlic and rosemary...it just sort of shriveled down into being almost unnoticeable but was a sneaky way to add more veggies to our meal that went well with the squash. Served our risotto with a pork tenderloin and green peas. It was a hit! Will be making again!
