The weather has turned warm that nobody wanted this for supper this week, so I transferred portions from jars to freezable containers on Tuesday, leaving a couple of portions for lunches.
In fact, I did have this yesterday for lunch & it was so flavourful, savoury & sweet with the touch of coconut milk. I put butter in a pot, threw in a portion of leftover Basmati Rice from Sunday's supper. I put the curry in a pot on the stove & the squash really had softened up. So pleased I tried this!
