So tasty! I doubled this recipe and baked it all in one glass dish for about 45 minutes. The texture is great, each slice actually holds together like a cake, which is unlike most other baked oat recipes I've tried. For me, 1x the recipe is 4 servings.
I used frozen blueberries and that worked a treat.
The subtle lemon flavour is really nice, if anything I would go for even more and add a teaspoon of lemon extract or an extra lemon zest? That may have been down to my lemons being smaller than the recipe asked for, but worth me remembering as it's hard to find large lemons where I live.
