This is good, very rich, very Midwest casserole vibes. We used acorn squash, getting bites of that was my favorite part! More of that would have been nice. The crunch of the ritz was nice too. I just thinly sliced the carrots instead of shredding which worked fine. We had it as a full meal, and it felt like it was missing something. Maybe it needed to be served with some brown rice. Im a very slow prepper, so it took me a while to peel and cut the squash and onion, boil it, and mix it all together. But the process was very simple.
