I doubled the recipe and omitted the potato. About 5 cups uncooked basmati. Soaking the basmati for 30 minutes beforehand, I actually didn't need to cook it much longer than the 6 minutes parboil, and then just as much time as it took to boil the rest of the water off. Carrots didnt need too long to cook because they cook partially just mixed into the hot rice. I heated the peas in the microwave and mixed them in at the end. I should have added salt to the water when parboiling the rice.
