I made this with 1 1/2 cups of chopped Granny Smith apples and a lot more cinnamon, fair amount of ginger paste, brown and white sugar, and as always, twice the vanilla. I didn’t split or swirl it.
Baked at 350/180 for 50 minutes in a loaf pan. Smells amazing. Tastes great, only a little bit sweet, this would make great breakfast slices!
