It's a lovely cake indeed! I follow the recipe faithfully and the cake is always big hit. I've made several keto carrot cakes that were just as good but this one was the easiest. The last one I made was for my friend's birthday and all the guests raved about it. There were 2 diabetics among the 12 of us. No one else knew it was any different from traditionally made cake. It's also very nice baked up as cupcakes.
