Option 2 Ingredients:
2 cups water
1 tsp fresh ginger diced
1 lemon
2 tablespoons of honey
a dash of cinnamon (optional)
1. In a microwaveable container, add the water, and ginger. Place in the microwave on high for one minute. The water should begin to turn a golden color.
2. Next, strain the mixture (unless you enjoy bits of ginger) and add the lemon and honey, mixing thoroughly.
3. Return to the microwave for another 30 seconds, add cinnamon if desired, then serve. In absence of a microwave, this can also be done on the stove:
4. In a small pot, bring the water to a soft boil. Add the ginger and allow it to steep in the water for a minute or two, until the water begins to change color.
5. Lower the heat and strain out the ginger.
6. Return the water to the heat and add in the lemon and honey, stirring to incorporate. Heat the mixture until just before it begins to boil again, then serve.
Option 3: Just boil some water. Squeeze half or whole lemon into mug, add massive blob of honey. Pour on hot water. Taste it to get the lemon honey balanced perfectly (there's a point at which it's not really sweet or sour). You can add other stuff like ginger, chilli, etc. Don't need to strain it. I just finely slice ginger like its grated and add it in. It goes soft and is yummy to eat.
