I didn't follow exactly as I had to use what was on hand. Because I used 1# of hot sausage, instead of 3/4#, I slightly increased all other ingredients. I didn't have mascarpone so I substituted with 1/4 cup of heavy whipping cream and 3 tablespoons of sour cream. I also added approximately 1/3 cup of mozzarella the same time I added the Parmesan. I used dry sherry since I didn't have Marsala. Let me tell you those mushrooms soaked up that olive oil and sherry like little sponges.
