I followed another review that noted roasting the veggies in the oven, (thank you for that suggestion) so I roasted cherry tomatoes, eggplant, red onion, red peppers and garlic with olive oil, salt , cracked pepper and Italian seasonings for approx 20 minutes while I boiled the pasta and browned the chicken breast in a little bacon drippings. I know taboo, but delicious.
Added the balsamic to the bottom of the pan once chicken was 95% done then scraped in all the roasted veggies sprinkled over with basil and added the Pearl mozzarella balls. Put the lid on until the cheese softened and bubbled a bit and then Drizzled the balsamic honey glaze over each as I plated. Absolutely delicious.
