I tried the suggestion of adding red wine, and it was ok. Next time I won’t add wine.
I seared the roast on all sides in a dutch oven before adding to crockpot, and used the leftover brown bits plus 2 cups of crockpot au jus (after the 7hr cook time) to make a gravy. Then I sliced the roast, added to gravy and slow cooked for another 2 hours.
