Made it non vegan...added:
Chicken thighs with a verde rub
green chili powder
dash red pepper flakes
used reduced sodium chicken broth
seared the chicken after the mushrooms . removed
sauted the onion, celery, and carrots 4 tbs butter.
followed recipe (added green chili powder and chili flakes with rest of seasonings) until after adding all of the broth.Then added the chicken and mushrooms back to soup.
Cooked rice according to recipe. Then took out the chicken and shredded. Then added back in.
