Followed the recipe exactly. I had a 5.2 lb roast and left it in the initial roast step for 3 extra mins, then followed the same steps for cooking. I used an instant read and an oven probe thermometer, found discrepancies about 3 degrees, where the instant read was lower. Definitely keep an eye on it. It came out beautifully caramelized and it was delicious. We didn't care for the wine sauce, though.
