Everyone was surprised at how delicious and moist these muffins were. My family went from wishing I had made banana bread instead to battling over who was going to eat the whole batch. I did swap out the coconut oil for vegetable oil and I made a cream cheese frosting to top them. Was not disappointed, this will be a go to recipe
