Used cut up boneless skinless chicken thighs that I put a taco seasoning rub on and let marinade overnight. Still added all the seasonings that the recipe calls for. I also use Rotel original which I did not drain. Since I didn't drain the tomatoes I only did 1 3/4 cups of stock. My rice called for 2 cups of liquid. This was perfect. The amount of broth called for in the original recipe would have made this soupy. Simple and tasty. Topped with diced fresh tomatoes, onions and avocado. Husband approved.
