These are amazing! I made the cinnamon balls the day before and froze them (note, I attempted a short cut by piping blobs with a pastry bag/tip thinking it would be easier but they ended up more like smears than balls so, nice try but nope). Made the cookie dough the next day, balls freeze great for later baking - these make a mess of the pan so I had to shape them with a cookie cutter right after they came out but wow, they're fantastic! They stay soft for days and are great with coffee/tea. These are my new favorite cookie and nearly everyone I gave some too mentioned how good they were. MUST MAKE EVERY YEAR FOR COOKIE TRAYS!
