Traditional Chimicurri does not have cilantro in it. It's based on flat leaf parsley, although you certainly aren't the first person to ask that question. Of course, like any recipe, you are free to add and adapt, but this recipe does reflect the original.

I consulted with an Argentian friend of mine and he said that flat lead parsley is correct, but he also stated that many cooks will add cilantro, including his wife, so it's optional I reckon.

There's no cilantro in Argentinian chimichurri... as in any recipe, you can add it if you want, but it won't be the traditional sauce
