I only really use the salsa recipe, with a few minor changes so that it's less underwhelming. For more spice, I use either 2 jalapeños or 1 jalapeño and 1 Serrano, depending upon what I have on hand/is available at the market. I use slightly less than 1/3 cup of cilantro, because as much as I love it, even I find it a bit too much for this recipe. Depending on the flavor, I often add a bit of lime zest, to taste, in addition to the lime juice, for a bit more flavor. Finally, due to size discrepancies of the remaining ingredients, the ratios can seem a bit off at times. When this happens, I just adjust the ingredients until I'm happy with the results. Make sure to make ahead and cool in the refrigerator to allow the flavors to marry.
