Like most people I made some changes. I used salted butter so between that and the pecorino romano and the parmesana regiono I didn't add any additional salt. As noted I used 2 cheeses, 1/4 cup of each. I also used 1/3 cup of a Sav. Blanc wine, which was perfect. I used a garlic and fresh thyme infused olive oil. Yum! I added sliced mushrooms just before sauteing garlic. Threw in about 1/2 cup of peas with the wine. I also marinated the shrimp in some Old Bay Garlic and Herb seasoning. Added just black pepper to taste. I threw in about 10 oz. of cooked cheese tortellini with the wine. Was quite tasty
